  7. 10-12 kaju (cashews)
  8. 1/4 tsp nutmeg powder
  9. 1/2 tsp elaichi powder
  10. as required Juice of 1/4th of a lemon
  11. 2 cup water
  12. 2-3 green chillies

Steps to make to make Kaju vale aloo

  1. Cut the potatoes in halves.In a kadhai, add ghee and a lil bit of salt to it. Add the potatoes in batches. Fry them on medium flame, till they change colour. Keep them aside.
  2. Now, make a fine paste of ginger, green chillies and kaju.
  3. Now, to the leftover ghee, add,jeera.
  4. To this add the cashew paste and let it thicken up a bit.
  5. Now, all the spices, cook at medium to low heat till the masala leaves oil.
  6. Add in the potatoes, coat them with masala, cover and cook for 3 mins.
  7. Add, water,cover and cook for 5-6 mins.
  8. In the end add elaichi powder, Cover and simmer for 4-5 mins more. Switch off the gas, squeeze in the lemon. Mix and its done.
  9. Garnish it with roasted cashew and green chillies.Serve it hot with your favourite vrat dish I served it with buckwheat flour pooris.Enjoy!
