I was love Poke bowls, they are so easy to make and you can swap out loads of the ingredients. This week we are in Thailand on our Global Food Tour so I tried to add some Thai flavours to mine 😊

  8. 1 Lime
  9. Small Handful of Mint
  10. 1 Tsp Sugar
  11. Handful Iceberg Lettuce
  12. 1 Spring Onion, Chopped
  13. 1 Cob of Sweetcorn
  14. 1 Carrot, peeled into Ribbons
  15. 1/2 Cucumber Chopped into Sticks
  16. 1/2 Avocado
  17. 1 Small Handful of Cashews, chopped
  18. 1 tsp Soy Sauce
  19. 3 tsp Mayonnaise
  20. 2 tsp Sriracha
  21. to taste Salt

Instructions to make to make Fried Noodle Poke Bowl 🍲

  1. In a pan add the chilli, garlic, and some of the ginger and oil on a low heat. After a minute add the noodles and stir fry until they are cooked. Add some salt if you would like some.
  2. Chop the mushrooms. Add the chopped ginger, chilli powder and sugar. Squeeze a segment of lime over the mushrooms. Cook until they are soft.
  3. Shred the lettuce. Assemble in a bowl with the carrot and cucumber. Squeeze a wedge of lime over the lettuce.
  4. Boil the sweetcorn in a small pan of water until a little cooked. Bring off the boil. Cut the corn off the cobb.
  5. Add the noodles and mushrooms to the lettuce. Top with the avocado, cashews, mint, sweetcorn and lime wedges.
  6. Make a Sriracha mayonnaise by mixing the mayo, some sesame oil, soy sauce and Sriracha together. Drizzle on top of the bowl and enjoy!
