- Wash Rice properly & gently so that it’s grains don’t break.
- Wash them for 2-3 times so that their starch is completely released & water turns transparent in colour.
- After 2-3 washes, when starch is completely released & water turns transparent, drain out all the water from them & keep them aside.
- Wash Aloo, Gajar, Gobhi properly, peel off their skin & chop them in medium-small size pieces.
- Now again wash them properly.
- Chop Green Chillies very finely & onions in slices.
- Now take a pan, add 1 Table Spoon Desi Ghee & 1 Small Cube Butter in it & keep the gas on medium-low flame.
- When ghee & butter gets heated up, add Khade Masale & finely chopped green chillies in it & cook them for 1-2 minutes.
- After 1-2 minutes, add slices onions in it & cook them till they turn translucent.
- After 1-2 minutes, when they turn translucent, add roughly chopped aloo, Gajar & Gobhi & 1 Cup Frozen or Fresh Matar pieces in it & mix them properly.
- Now close the lid & cook them for 4-5 minutes.
- After 4-5 minutes, open the lid & add drained rice in it & mix them properly & gently.
- Now roast them with vegetables for 6-7 minutes so that desi ghee & butter sticks to every grain of rice properly.
- This process will help in not sticking rice grains together after cooking.
- After 6-7 minutes, add 1.5-2 Cup Water in them & mix them properly.
- Then add 1.5 Teaspoon Salt in it & mix it properly.
- Now let it boil.
- When water starts boiling, add 1 Lemon Juice in it & mix it properly.
- Now close the lid, lower the flame & cook them for 10-15 minutes.
- After 10-15 minutes, turn off the flame & let them rest in their steam for 10 minutes.
- After 10 minutes, open the lid & stir them properly & gently.
- Your Mix Vegetable Pulav is ready to be served.
